When we imagine someone sucking the marrow from bones, we picture medieval peasants. Though once popular, the practice came to be seen as savage and uncultured. This aversion was driven, in part, by a misconception about marrow and its fat content. In 1994, however, an English chef made this spongy meat the star of his menu. From there, it became a quirky, luxury food item. And these halal, grass-finished marrow bones are worthy of the pickiest connoisseur.

Bone marrow is the fatty tissue at the center of animal bones. Brimming with vitamins and nutrients, this cut provides ample health benefits. While found in all livestock, most of the split marrow in the US is harvested from cattle. When cooked, this spongy meat becomes buttery and rich.
