Doodh Malai is a milk-based breakfast dessert popular in Northern India-Pakistan. Boasting the consistency of porridge, it’s a versatile treat that can be served as a side dish or chilled for a bit of summertime relief.  While many people add dry fruit, traditionalists rely solely on cardamom and saffron for flavor. To stop it from seeming one-note, many recipes (including the one followed by Rehmat-E-Sheereen) call for a crushed nut topping. Though there are doodh malai box mixes out there, they don’t come close to mimicking the real thing.
